Beetbox and a View
I was never a fried chicken fan, not really anyway. But I did love the spicy fried chicken sandwich at KFC every once in a while. But for some reason, fried “chicken” has been the thing I try any time I see it on the menu at a vegan restaurant. I have found a few real winners, but one of my favourites has to be the various incarnations of a spicy fried chicken sandwich done by BeetBox in Vancouver.
I first discovered them on DoorDash. Early 2021, before we even had a hint of vaccines, and things were still very locked down, I needed a mental health break. I had worked in a frontline position for the first 6 months of the pandemic, and then had a massive career change. Add to that the stress of being immune compromised, and well… I’m sure a lot of us needed to find ways to take care of our mental health.
For me that came in the form of booking myself into a room at the Westin Bayshore. Upon arrival they upgraded me to a room overlooking Stanley Park and the Coal Harbour marina. It was instant peace. Despite being February, it was blue skies and no rain. The city noises melted away and I was instantly relaxed just watching the water move.
But… what about food? I couldn’t really go out anywhere, and room service wasn’t vegan-friendly. So I started what has since become a love affair with food delivery service. And my very first order… BeetBox.
The Nashville Fried Chick-Un Sandwich was delicious, as were the onion rings. But the real surprise? The roasted broccoli & mushrooms! It formed a memory of the perfect little picnic for myself. So recently when I found myself downtown with some good weather I knew there was only one thing to do… BeetBox take out at the Beach.
Now the weather wasn’t warm enough to sit outside, but I listened to podcasts at the Brockton Lighthouse, and tried desperately not to get the Korean Fried Chicken sauce all over my new car. (To be honest… I should have packed a bib!)
I have yet to actually eat inside, I’m still a bit hesitant about indoor dining. But thankfully that hasn’t prevented me from some absolutely amazing food. And if anything, it’s started a new tradition!
