It’s Just Egg?

But… why? That’s the question I kept asking myself. Why would I want to eat vegan eggs when I’d never eaten one before? What could possibly be so good about them?

It took me over a year from first hearing about Just Egg until I actually tried it. And to be honest, it would have been longer but I happened to walk past it half price in my local grocery store one day when I was feeling particularly “oh why not” and throwing everything in my cart. I had just seen Rescue Dog kitchen using it, and thought if it’s good enough for John, it’s something I have to try.

But I still wasn’t entirely sold. I’d been enjoying tofu scramble for years, so why bother trying to make scrambled Just Egg? Instead I went for something I hadn’t been able to eat… an omelette.

And that is where the magic began. It’s also where it quickly ended when I realized how hard it was to fold an omelette you’ve stuffed with everything imaginable.

My first efforts included herbes de Provence, Violife cheddar shreds, green onion, kale, mushroom, and Grace hot sauce. It was divine! Suddenly I understood why people ate them for breakfast!

The following day I tried out a frittata with vegan bacon, and butternut squash. And again… AMAZING!

I was afraid that it was going to taste strangely, but really the taste was quite neutral. Fair warning that it does have a bit of a funky mung bean smell in the bottle. But it’s now become something I’ll pick up now and then when I’m craving a fun breakfast.
